Cheese of Mercy. Greetings We

Certamente non posso prenderla tutta, decidiamo di prenderne un quarto di forma in due fette per un peso totale di circa un chilo e settecento grammi. Prima di incartarlo ne stacco un pezzetto da assaggiare e………. appena comincio ad assaporare la mente va ai lunghi cammini che i nostri vecchi, pellegrini, facevano per arrivare al Santuario della Misercordia al suono di organetti e zampogne e sicuramente trovavano anche una fetta di formaggio. Ci siamo sentiti telefonicamente con l’artefice produttore e casaro, che con enorme sacrificio, in un terra difficile, forse solo per una scommessa con se stesso o chissà per qual altro miracolo ha dato vita a questo formaggio senza nome, che per comune sentire abbiamo voluto chiamarlo per vicinanza, e non solo: Misericordia.
